Smile Human FOV and VIrtual FOV

Hello everybody,
I am trying to match the virtual movements of my virtual hand with the real hand. Stereo visualization let me show the object coming out the screen. Now, as I can see my objects near to me, I would like to grab it with my glove, without watching the screen directly but simply looking at the object and moving my hand on the object. Unfortunately, my real movement often do not match with virtual one.
So, any suggestion of someone who had experience in that?
Can the Field of View used for rendering change the percpetion of the objects when the come out because of the stereo rendering? Should I match the human FOV with the rendering FOV? if yes, what is the human fov?
